It's possible to setup Liferay Tomcat bundle and Liferay JBoss bundle on the same server if you change to use different port number.
It's also possible to run serveral JBoss configurations on one instance of JBoss too.
It's also possible to setup several vm on a single server with each one running Liferay.

Two tomcats, then?

No problem.

Each will have their own directory. By default they're both configured to use port 8080, you'll need to change the port on one of them.

For deployment, just drop the war files into the deploy directory of each of the bundles to deploy to both servers.

I would caution against using the same webapps folder for both instances (same way as I'd caution against using the same database and the same data directories). If you are trying to set up a clustered tomcat, then follow the instructions for clustering. Don't try to 'roll your own' cluster implementation.
