what are _aui.custom.scss , _aui.variable.scss files in liferay 6.2 theme??

I have created maven theme in liferay 6.2.
There are files like _aui.custom.scss , _aui.variable.scss in webapps/css folder.
Can anyone please tell me what is the use of these files?
When I removed .sass-cache folder, complete UI got disturbed.
what is the use of .sass-cache folder?
