With Liferay 6.1 is possible to create a poll in a forum portlet with multiple answers ? how can I do ?

Not within the forum itself. There is a poll portlet that can cover that end, but it's outside of the forum...

To use the Polls portlet, go to "Control Panel" -> "Polls". Enter your questions.
On the page you have Message Board portlet, select "Add" -> "Content Management" -> "Polls Display". Select question to display.

As David said, Polls portlet is not related to a single forum.

Another question for you:

In the polls portlet I see only one question at a time, Is possible see more questions or I need to create multiple portlets?

Yes, one question with multiple answers. If you have multiple questions, you'll need to put multiple polls portlets on a page.
